Paul DeNigris’s Apple-Smoked Baby Backs on Ribalizer

Our very own Ribalizer Video Dude, Paul DeNigris, happens to be a big Ribalizer Fan.  Actually Paul does quite a bit more than just the great videos that make us look like a much bigger and better funded company than we really are.  He helps with all of our marketing including our social media and he’s been involved with the business since the get go.

So it’s not surprising that Paul would have his own spin on Ribalizer BBQ ribs. He doctors his up with some apple wood for flavor and uses apple juice as the pan liquid.  Check out his delicious Ribalizer Apple Smoked Baby Backs in this video and try them out for yourself.

Ingredients
Meat
  • 3-6 racks Babyback Ribs
Condiments
  • 1/2-1 cup Ribalizer Spice Rub
Liquids
  • 2 liters Apple Juice
  • 2 cups Stock or Wine (optional)
Wood Chips
  • 1 pound Wood Chips
Instructions
Prep the Ribs
  1. Remove the membrane from the back side of the ribs.

  2. Liberally apply Ribalizer "Rub the Ribs" Spice Rub to taste.

  3. Refrigerate ribs until you're ready to Ribalize. You can do this prep up to 24 hours in advance.

Prep the Grill
  1. Add apple wood chips to your grill. You can do this by creating packets with heavy duty aluminum foil (poke holes in the packets) or you can pour the chips directly on the grill elements below the grates.

Prep the Ribalizer
  1. Set the Ribalizer rack into a disposable foil steam tray. Install the Ribalizer Meat Separator.

  2. Set the Ribalizer on the grill.

  3. Insert racks of ribs into the Ribalizer Meat Separator. (Do this on the grill - ONLY move the Ribalizer when it's empty!)

  4. Add apple juice to the bottom of the Ribalizer assembly. This liquid should come up to the bottom of the Ribalizer and not touch the meat.

Grilling
  1. Light the grill, set it to medium to medium-high. Close the grill. Smoke should begin to develop.

    After 15 minutes check to ensure that the liquid isn't boiling. If it is, lower it.

  2. After a total of 45 minutes of smoking, top off the liquid with water as needed.

    Close the Ribalizer by adding another disposable foil steam tray on top of the Ribalizer.

  3. Continue grilling on medium to medium-high for 1 hour and 15 minutes.

Finishing
  1. At the end of the 2 hour Ribalizer cycle, turn off the grill and carefully remove the top foil pan.

  2. Using tongs, remove the rib racks from the Ribalizer.

  3. Cut the ribs and plate them up. Serve immediately!
